Starting next week, the Loyalist Market will increase the prices of its prepared meals by $1 per item. But higher food costs aren’t to blame – the money goes straight to its staff.

Founder Christopher Sottile announced Matthews Market and restaurant’s first-ever overall price increase in a video on Instagram, saying, “I’m very confident that as you learn more about the why of what we do , not only will you appreciate what I’m trying to accomplish, but you’ll be willing to support it because of the reasons behind it. »

Full-time employees at the market known for its premium cheeses and meats earn $15/hour. But it “pretty much scrapes the bottom of what a real living wage means,” Sottile said. “Our people deserve more.”

Retail deli and cheese prices will not increase. Beer and wine either. But each menu item of sandwiches, salads and cheese and charcuterie boards will increase by $1.

Sottile said the change would bring in about $45,000 in revenue, all for his staff. “Every penny will be given to my team in the form of a raise, immediately.”

Each full-time employee will receive the equivalent of a $2 per hour increase, and each part-time employee will receive a $1 per hour increase.

Sottile noted that the restaurant industry is changing and adaptations have become necessary to stay in business.

“The places that are not going to die. This industry is broken,” he said.

Recently, Leah & Louise at Camp North End instituted service charges in lieu of tips to supplement their employees’ pay. And a grassroots effort launched by Charlotte chefs has boosted hourly wages for local food and beverage jobs.

“I want to be here, so I will continue to take care of the people who help me achieve my dreams,” Sottile said. “I know there will be some pushback…at the end of the day, I have no reservations knowing it’s the right thing to do.”
