Bubala restaurant menu comes to Soho with new opening

Helen Graham and Marc Summers won’t change a winning formula when they open their second restaurant in Soho in April. Bubala, which opened in Spitalfields in the fall of 2019, will continue to serve a menu of bright vegetarian cuisine with Sephardic influences when it moves to Poland Street. It succeeds Vasco and Piero’s, the beloved Italian restaurant evicted after a rent dispute with the building’s landlord.

The menu will bring several of the restaurant’s biggest hits from east London – beautifully crispy eggplant with date syrup and zhoug; potato latkes processed using the city’s favorite potato technique, confit; and the flaky, laminated Yemenite Jewish pastry, malawach.

Bubala, like many restaurants in the city, adapted quickly and decisively to the Covid-19 pandemic. It introduced meal kits and home delivery, but also changed its model, introducing a dinner set menu under the cute but firm moniker, Bubala Knows Best.

Summers said the restaurant represents the fulfillment of a long-held, but carefully held ambition.

“Bubala’s growth has always been a long-term goal, but it’s a step I wanted to take carefully and didn’t want to rush. I feel like we have the best possible team now and the site looks perfect. Just can’t wait to open and bring some Bubala to central London.
